Ingredients

  • 3/4 lb raw, counted cooked / 137.4 g Bacon, cooked and drained
  • 1 medium / 110 g White onion
  • 20 oz / 567 g Frozen shredded hash browns
  • 6 large / 300 g Large eggs, for the skillet
  • to taste Salt
  • to taste Black pepper
  • 1 cup / 113 g Shredded cheddar, for the skillet
  • 1/4 cup / 51.25 g Reserved pan drippings

Method

  1. Prep at home: Chop 3/4 lb of bacon and 1 white onion. The comment does not give an onion size. A USDA medium onion is 110 g. Pack the chopped bacon, the onion, a 20 oz pack of shredded hash browns, 6 large eggs, and 1 cup of shredded cheese in the cooler. The comment says 1 pack of shredded hash browns and does not weigh it. This card uses 20 oz, 567 g. A 12 oz database package and a 30 oz bag are not used. The comment says 6 to 8 large eggs. This card uses 6, the low end. A large egg is 50 g, so 6 are 300 g. The cheese line says shredded cheese and does not name it. This card uses cheddar. A cup of shredded cheddar is 113 g. The comment does not split the work into home and camp. This card does the chopping at home and the skillet at camp. The comment says the full recipe can be halved. This card uses the full list.
  2. At camp: Set a large cast-iron skillet with a lid over the fire. Cook the bacon and the onion until the bacon is cooked through. Drain the skillet and leave about 1/4 cup of the drippings in the pan. The comment says to reserve about 1/4 cup. A cup of lard is 205 g, so 1/4 cup is 51.25 g. The bacon on the plate is the cooked, drained weight, 137.4 g, from the 340.2 g raw. The comment does not say to throw the bacon away.
  3. At camp: Add the shredded hash browns. Let the bottom brown, about 10 minutes, depending on how hot the fire is. Turn the potatoes. The comment gives that time and that turn.
  4. At camp: Make 6 wells with a spoon. Break one egg into each well. Salt and pepper go on to taste, so they are not in the count. Cover the skillet until the eggs are set and the potatoes are soft. Take the skillet off the fire. Sprinkle the cheese on top and let it stand until it melts. The comment also allows 7 or 8 wells. Those ends are not used. This card uses 6 plates, one egg each. Leftovers keep covered in the fridge for a few days. Reheat until the eggs are hot in the center.

Nutrition

Kitchen estimate only, not lab-verified. Counted as 1 of 6 plates. The comment does not count plates. The comment says 6 to 8 eggs and 6 to 8 wells. This card uses 6 plates, one egg each. The bacon, the onion, the hash browns, the eggs, the cheddar, and the reserved drippings are in the count. Salt and black pepper are to taste, so they are not in the count. The bacon starts at 3/4 lb, 340.2 g, raw. The method drains it. The plate uses 137.4 g of cooked pan-fried bacon, from the raw protein against the cooked protein. The 1/4 cup of drippings stays in the pan and is counted as lard, because there is no bacon-fat row. The hash browns are 20 oz, 567 g. The comment said a pack and did not weigh it. The eggs are 6 large, 300 g. The cheddar is 1 cup shredded, 113 g. Added sugars are 0. The card did not list a sweetener. About 1 g of sugars per plate sit in the onion, the eggs, and the cheese. The bacon and the cheddar are the salty parts. One plate is 600 mg sodium.

Guest diet / allergy swaps

Short kitchen notes for guests. A fuller gluten-free or dairy-free ingredient list, when we have one, is in the panels below.

  • Dairy-free

The dairy is the 1 cup of shredded cheddar on top. Leave the cheese off, or use 1 cup of a shred whose package does not list milk. The bacon, the hash browns, the eggs, and the drippings stay. Read the bacon package. Some bacon lists cheese. This is a kitchen note, not a dairy-free certification.

    • United States: Leave off the cheddar, or use a shred with no milk. Read the bacon for cheese.
    • United Kingdom: The same note. The cheese is the dairy. Check the bacon.
  • Gluten-free style

The written skillet does not call for flour. Wheat, when it shows up, is in the bacon or the hash brown bag. Use bacon and hash browns whose packages do not list wheat. The cheddar stays, so this plate is not dairy-free. Read the cheese. This is a kitchen note, not a gluten-free certification.

    • United States: Bacon and hash browns whose packages do not list wheat. The cheddar stays, so this plate is not dairy-free.
    • United Kingdom: Bacon and hash browns marked gluten free. The cheddar stays.
  • No pork

This skillet is built on bacon. It is not written for another meat. A different crumble would be a different plate. The drippings are bacon fat.

    • United States: This skillet is bacon. It is not written for another meat. The drippings are bacon fat.
    • United Kingdom: The same note. This is a bacon plate.
