Ingredients

  • 1½ cups / 250 g Cooked chickpeas, drained
  • 1 medium Cucumber, diced
  • 2 Tbsp Lemon juice
  • 2 Tbsp Olive oil
  • ¼ cup Fresh parsley, chopped
  • ½ tsp Kosher salt
  • To taste Black pepper

Method

  1. Rinse and drain the chickpeas. Pat dry.
  2. Toss with cucumber, lemon, oil, parsley, salt, and pepper.
  3. Taste. Add more lemon or salt if it tastes flat.
