Eggs and cottage cheese blended smooth and baked in a muffin tin over hot water. Bacon, chives, or tomatoes are optional on top.

Ingredients

  • 18 Large eggs
  • 1 cup Full-fat cottage cheese
  • 1 cup Shredded cheddar (Swiss works too)
  • 1 tsp Black pepper
  • 1 tsp Salt
  • To taste Optional add-ins, such as cooked crumbled bacon, chopped chives, or diced tomatoes

Method

  1. Heat the oven to 300°F / 150°C. Set a pan of hot water on the lower rack, or set the muffin tin inside a sheet pan of hot water, so the oven stays humid.
  2. Grease a muffin tin. A silicone tin releases most cleanly.
  3. Blend the eggs, cottage cheese, shredded cheese, salt, and pepper until smooth. Stop as soon as it is combined. Extra air makes the bites sink as they cool.
  4. Fill the cups about halfway. Scatter add-ins on top. If you use bacon, cook it crisp and crumble it first. Bacon is optional, and it adds pork.
  5. Bake 35–37 minutes, until the centers are set.
  6. Cool a few minutes, then lift them out. They freeze well wrapped, or in a freezer bag, and reheat from frozen.

  • No pork

    Leave the bacon off, or use cooked turkey bacon. Chives, tomatoes, and other vegetables keep the bites pork-free. The base has no pork until you add it.

  • Low-sodium friendly

    Cut the salt to ½ teaspoon and use a lower-sodium cheese. Cottage cheese still has sodium of its own. This is a kitchen note, not a low-sodium diet.

  • Dairy-free style

    Use a dairy-free cottage cheese alternative and dairy-free shreds. The custard will set differently. Read those labels. This is a kitchen swap, not medical advice.

  • Gluten-free style

    Eggs, cottage cheese, and plain cheese have no wheat as written. Check add-ins, especially seasoned bacon or any mix-in with a label.

    • United States: The base is eggs and cheese. Seasoned bacon and other add-ins are the labels to read.
    • United Kingdom: Plain eggs, cottage cheese, and cheese have no wheat. Check any bacon or mix-in packet.
