Ingredients

  • 1 Tbsp / 14 g Neutral oil
  • 1/2 lb / 226.8 g Tortilla chips
  • 1 can (7.75 oz / 219.7 g) Hot tomato sauce
  • 1 cup / 113 g Shredded Mexican cheese blend
  • 1 can (14.5 oz / 411 g) Black beans
  • 1 large / 201 g Avocado
  • 4-5 medium / 67.5 g Green onions
  • 1/4 cup / 4 g Cilantro, for the nachos
  • 1 fruit / 67 g Small lime

Method

  1. Prep at home: Drain the black beans. Cube the avocado. Slice the green onions. Chop the cilantro. Cut the lime into wedges. Pack the beans, the avocado, the onions, the cilantro, the lime, the cheese, the hot tomato sauce, the chips, and the oil in the cooler. The page says 1/2 lb of tortilla chips, 226.8 g. It says one 7.75 oz can of hot tomato sauce or salsa and names a brand, or equivalent. This card does not use the brand. 7.75 oz is 219.7 g. It says one 14.5 oz can of black beans, drained. The 14.5 oz net weight is 411 g with liquid. The count uses the drained-can weight, 266 g. It says 1 large avocado and does not weigh it. One USDA avocado is 201 g. It says 4 to 5 green onions. The midpoint is 4.5 medium scallions, 67.5 g. It says a handful of cilantro and does not weigh it. A quarter cup of leaves is 4 g. It says 1 small lime. One USDA lime, 2 inches across, is 67 g. The page says the written recipe does not include meat. Chicken, ground beef, and pulled pork stay off this card.
  2. At camp: Lightly oil the bottom of a Dutch oven with the 1 tablespoon of oil. The page says a large Dutch oven, and a covered skillet works for a smaller pot. For the first layer, spread about one third of the chips, then about one quarter of the sauce, one quarter of the beans, 1/4 cup of the cheese, and some of the avocado, the green onions, and the cilantro. Repeat that for a second layer. For the third layer, use the rest of the chips, about half of the sauce, about half of the beans, the rest of the cheese, and the rest of the avocado, the onions, and the cilantro. The page splits the layers that way.
  3. At camp: Cover the Dutch oven. Set it on a metal grill over the campfire for about 10 minutes, until the cheese has melted. The page gives that time. It does not give a coal count. Serve with the lime wedges. The page says 2 servings for dinner, or 4 as an appetizer. This card uses 2 dinner plates. Leftovers keep covered in the fridge for a few days. Reheat until the beans and the cheese are hot in the center.

Nutrition

Kitchen estimate only, not lab-verified. Counted as 1 of 2 dinner plates. The page also says 4 appetizer servings. Those plates are not used. The oil, the chips, the hot tomato sauce, the cheese, the beans, the avocado, the green onions, the cilantro, and the lime are in the count. The page does not include meat, so meat is not in the count. The chips are 1/2 lb, 226.8 g. A USDA bag is 213 g and is not used. The sauce is 7.75 oz, 219.7 g. The page named a brand, or equivalent. Salsa is the row. Added sugars are not split on that row. About 4.4 g of salsa sugars per plate were not classified as added or natural. Added sugars are 0. The card did not list a sweetener. About 8 g of sugars per plate sit in the salsa, the beans, the avocado, the onions, the chips, the cheese, the cilantro, and the lime. The cheese is 1 cup, 113 g. Cheddar is the row, because there is no Mexican blend row. The beans are a 14.5 oz can. The drained-can weight is 266 g, not the 411 g net weight. The avocado is 201 g. The page said large and did not weigh it. The onions are 4.5 medium, 67.5 g. The cilantro handful is a quarter cup, 4 g. The lime is 67 g, rind included. The chips and the salsa are the salty parts. One plate is 1535 mg sodium.

Guest diet / allergy swaps

Short kitchen notes for guests. A fuller gluten-free or dairy-free ingredient list, when we have one, is in the panels below.

  • Dairy-free

The dairy is the 1 cup of shredded cheese. Leave the cheese off, or use 1 cup of a shred whose package does not list milk. The chips, the beans, the sauce, the avocado, the onions, the cilantro, and the lime stay. Read the sauce and the chips. This is a kitchen note, not a dairy-free certification.

    • United States: Leave off the cheese, or use a shred with no milk. Read the sauce and the chips.
    • United Kingdom: The same note. The cheese is the dairy. Check the sauce and the chips.
  • Gluten-free style

The written pot does not call for wheat flour. Wheat, when it shows up, is in the tortilla chips or the sauce. Use corn chips and a sauce whose packages do not list wheat. The cheese stays, so this plate is not dairy-free. Read both packages. This is a kitchen note, not a gluten-free certification.

    • United States: Corn chips and sauce whose packages do not list wheat. The cheese stays, so this plate is not dairy-free.
    • United Kingdom: Corn chips and sauce marked gluten free. The cheese stays.
  • No beans

The beans are the 14.5 oz can. Leave them out. The chips, the cheese, the sauce, and the fresh toppings stay. It is a different plate without the beans.

    • United States: Leave out the black beans. The chips and the cheese stay.
    • United Kingdom: The same note. The beans are the can.
