Ingredients
- 1 medium / 110 g Onion
- 1 medium / 119 g Red bell pepper
- 1 lb / 453.6 g Ground spicy sausage
- 12 large / 600 g Eggs, for the burritos
- 8 oz / 226.8 g Shredded cheddar, for the burritos
- 8 / 576 g Burrito-sized tortillas
- to taste Salt
- to taste Black pepper
- not weighed Butter or oil
- optional, on the side Salsa or hot sauce
Method
- Prep at home: Dice the onion and the red bell pepper. The post says 1 onion and 1 red bell pepper and does not give a size. A USDA medium onion is 110 g. A USDA medium red pepper is 119 g. Cook the vegetables in butter or oil until they soften. Salt and pepper go on to taste, so they are not in the count. The post says butter or oil and does not give an amount, so that fat is not in the count. Take the vegetables out of the pan.
- Prep at home: Cook 1 pound of ground spicy sausage until it is cooked through. Take it out of the pan. Scramble the 12 eggs in the fat left from the sausage. Salt and pepper the eggs to taste. The post does not give an egg size. A large egg is 50 g, so 12 are 600 g. A pound of sausage is 453.6 g. The post does not say to pour the fat off. The sausage goes into the burritos, and the fat left in the pan cooks the eggs. Let the filling cool before you roll it. The post says a hot filling makes the tortillas damp.
- Prep at home: Stir shredded cheese into the cooled filling and roll it in 8 burrito-sized flour tortillas. The post says shredded cheese and does not weigh it. This card uses 8 oz, 226.8 g. The post says burrito-sized tortillas and does not give a diameter. This card uses the 10-inch flour tortilla, 72 g each, so 8 are 576 g. Wrap each burrito in foil. Pack the foil wraps in a gallon bag in the cooler. Salsa or hot sauce stays out of the wrap. The post says it adds moisture. The fish in that same post is not in this card.
- At camp: Set the foil wraps on a grill grate over the fire, not in the flames. Heat about 20 minutes, turning them now and then, until the center is hot. The post gives that time and that turn. It does not give a coal count. Unwrap and eat. Salsa or hot sauce can go on at the plate. The post says the batch makes 8. Leftovers keep covered in the fridge for a few days. Reheat until the sausage and the eggs are hot in the center.
Nutrition
Kitchen estimate only, not lab-verified. Counted as 1 of 8 burritos. The post says the batch makes 8. The onion, the pepper, the sausage, the eggs, the cheddar, and the tortillas are in the count. Salt and black pepper are to taste, so they are not in the count. Butter or oil is in the method and is not weighed, so it is not in the count. Salsa or hot sauce stays on the side, so it is not in the count. The onion is a USDA medium, 110 g. The post did not give a size. The pepper is a USDA medium red pepper, 119 g. The sausage is 1 lb, 453.6 g, raw. The post does not say to pour the fat off, so the raw weight stays. The eggs are 12 large, 600 g. The post did not give a size. The cheddar is 8 oz, 226.8 g. The post said shredded cheese and did not weigh it. The tortillas are 8 flour tortillas at 72 g, 576 g. The post said burrito-sized and did not give a diameter. Added sugars are 0. The card did not list a sweetener. About 5 g of sugars per burrito sit in the tortillas, the pepper, the onion, the sausage, the eggs, and the cheese. About 2.7 g of those sugars are in the tortillas, which USDA does not split. The sausage, the tortillas, and the cheddar are the salty parts. One burrito is 1240 mg sodium.

Guest diet / allergy swaps
Short kitchen notes for guests. A fuller gluten-free or dairy-free ingredient list, when we have one, is in the panels below.
Dairy-free
The dairy is the 8 oz of shredded cheddar in the wrap. Leave the cheese off, or use 8 oz of a shred whose package does not list milk. The sausage, the eggs, the vegetables, and the tortillas stay. Read the tortillas and the sausage. Some of each list milk. This is a kitchen note, not a dairy-free certification.
- United States: Leave off the cheddar, or use a shred with no milk. Read the tortillas and the sausage.
- United Kingdom: The same note. The cheese is the dairy. Check the tortillas and the sausage.
Gluten-free style
The wheat is the 8 flour tortillas. Use 8 tortillas whose package does not list wheat, at the same 72 g each. The cheddar stays, so this plate is not dairy-free. Wheat, when it also shows up, is in the sausage. Read the sausage. This is a kitchen note, not a gluten-free certification.
- United States: Tortillas and sausage whose packages do not list wheat. The cheddar stays, so this plate is not dairy-free.
- United Kingdom: Tortillas and sausage marked gluten free. The cheddar stays.
No pork
These burritos are built on ground spicy sausage. They are not written for another meat. A different crumble would be a different plate.
- United States: These burritos are ground spicy sausage. They are not written for another meat.
- United Kingdom: The same note. This is a sausage plate.
