Ingredients

  • 2 lb / 907.2 g Chicken breasts
  • 1/2 cup / 122.5 g Plain yogurt
  • 1/4 cup / 61 g Lemon juice
  • 6 / 18 g Garlic cloves
  • 1 tsp / 2.3 g Paprika
  • 1 Tbsp / 16 g Tomato paste
  • to taste Salt
  • to taste Black pepper

Method

  1. Prep at home: Cut the chicken breasts into 1-inch cubes. The comment says 2 lb of boneless skinless chicken breast. A pound is 453.6 g, so 2 lb is 907.2 g. Mix 1/2 cup of plain yogurt, 1/4 cup of lemon juice, 6 minced garlic cloves, 1 teaspoon of paprika, and 1 tablespoon of tomato paste. The comment says regular yogurt, and it also allows Greek yogurt. This card uses plain whole-milk yogurt. A USDA cup of that yogurt is 245 g, so 1/2 cup is 122.5 g. A USDA cup of lemon juice is 244 g, so 1/4 cup is 61 g. A USDA garlic clove is 3 g, so 6 are 18 g. A USDA tablespoon of tomato paste is 16 g. The comment's spice is 1 teaspoon of sumac, and the same comment says paprika powder if you do not have sumac. This card uses paprika. A teaspoon of paprika is 2.3 g. Salt and black pepper go on to taste, so they are not in the count.
  2. Prep at home: Coat the chicken with the marinade. Keep it cold at least 30 minutes, or up to 24 hours. Soak 8 to 10 wooden skewers if you use wood. The comment prefers flat skewers so the pieces stay put. Pita, Lebanese rice, salad, and sumac onions in that comment are not in this card.
  3. At camp: Thread about 4 to 5 pieces on each skewer. Grill the skewers over the campfire grate, 3 to 4 minutes on each side, until the chicken is cooked through and golden. The comment's grill note is that same 3 to 4 minutes a side. The comment also heats oil in an iron skillet and does not measure the oil, so the oil is not in the count. Cook in batches so the pan is not crowded. The comment does not count plates. This card uses 4 plates. A squeeze of lemon at the table is not measured, so it is not in the count. Leftovers keep covered in the fridge for a few days. Reheat until the chicken is hot in the center.

Nutrition

Kitchen estimate only, not lab-verified. Counted as 1 of 4 plates: the chicken breasts, the yogurt, the lemon juice, the garlic, the paprika, and the tomato paste. Salt and black pepper are to taste, so they are not in the count. The oil in the skillet method is not measured, so it is not in the count. The comment does not count plates. Two pounds of chicken is the batch. This card uses 4 plates. The chicken is 2 lb, 907.2 g, of boneless skinless breast, raw. The comment does not say to pour anything off, so the raw weight stays. The yogurt is 1/2 cup of plain yogurt. The comment also allows Greek yogurt. Plain whole-milk yogurt is the row. A cup is 245 g, so 1/2 cup is 122.5 g. The lemon juice is 1/4 cup, 61 g. The garlic is 6 cloves. A USDA clove is 3 g, so 6 are 18 g. The paprika is 1 teaspoon, 2.3 g. The comment's spice is sumac, and the comment says paprika if you do not have sumac. Sumac is not an SR Legacy row. The tomato paste is 1 tablespoon, 16 g, without salt added. A salted paste would be higher in sodium. Added sugars are 0. The card did not list a sweetener. About 2 g of sugars per plate sit in the yogurt, the lemon, the paprika, and the tomato paste. The salt at the table is not in the count. One plate is 310 calories, 53 g protein, and 120 mg sodium before that salt.

Guest diet / allergy swaps

Short kitchen notes for guests. A fuller gluten-free or dairy-free ingredient list, when we have one, is in the panels below.

  • Dairy-free

The dairy is the 1/2 cup of plain yogurt in the marinade. Use 1/2 cup of a plain yogurt whose package does not list milk. The chicken, the lemon, the garlic, the paprika, and the tomato paste stay. This plate is already written without wheat. Read the paprika and the tomato paste. This is a kitchen note, not a dairy-free certification.

    • United States: A plain yogurt whose package does not list milk. Read the paprika and the tomato paste.
    • United Kingdom: A free-from yogurt. Check the paprika and the tomato paste.
  • Gluten-free style

The written skewers do not call for wheat. The chicken, the yogurt, the lemon, the garlic, the paprika, and the tomato paste stay. A paprika jar or a tomato paste can add wheat. Read the label. The yogurt stays, so this plate is not dairy-free. This is a kitchen note, not a gluten-free certification.

    • United States: There is no flour on the skewer. Read the paprika and the tomato paste. The yogurt stays.
    • United Kingdom: The same note. This marinade does not call for wheat. The yogurt stays.
  • No chicken

These skewers are built on chicken breast. They are not written for another meat. A different cube would be a different plate.

    • United States: These skewers are chicken breast. They are not written for another meat.
    • United Kingdom: The same note. This is a chicken plate.
