SavePork shoulder pressure-cooked with grapefruit, onion, garlic, and warm spices, then shredded and broiled. Adapted from a popular r/instantpot recipe.

Allergen tags are cooking labels. They are not medical advice.
Ingredients
- 4-5 lb / 2041.2 g Pork shoulder
- 1 / 196 g juice Grapefruit
- 1/2 Yellow onion
- 4 Garlic cloves
- 1 tsp Dried oregano
- 2 tsp Ground cumin
- 1 tsp Chili powder
- 1/4 tsp Ground cinnamon
- 1 Bay leaf
- 3 tsp Kosher salt
- to taste Lime juice
- to taste Chopped cilantro
- to taste Cooked rice
Method
- Cut the pork shoulder into large chunks. The linked card says 4 to 5 pounds, and it also calls this cut a pork butt. It prefers the meat without a bone. The midpoint is 4.5 pounds. A pound of the counted row is 453.6 g, so 4.5 pounds is 2041.2 g. That weight is the meat and fat. It does not include a bone.
- Zest the grapefruit and squeeze the juice. Slice the onion. Mince the garlic. Put the pork, the grapefruit zest, the grapefruit juice, the onion, the garlic, the oregano, the cumin, the chili powder, the cinnamon, the bay leaf, and the kosher salt in an electric pressure cooker. Stir so the meat is coated. The card uses 1 grapefruit, 1/2 onion, 4 garlic cloves, 1 teaspoon dried oregano, 2 teaspoons ground cumin, 1 teaspoon chili powder, 1/4 teaspoon ground cinnamon, 1 bay leaf, and 3 teaspoons kosher salt. SR Legacy has no grapefruit peel, so the zest is in the pot and is not in the count. The juice is in the count. Do not add a second liquid. The card says the grapefruit juice is enough to bring the pot to pressure.
- Lock the lid and set the valve to sealing. Cook on high pressure for 35 minutes. When the time is up, let the pressure come down on its own. The card does not give a minute count for that release. The linked page also gives a slow cooker and an oven. This card does not use either one.
- Move the pork to a rimmed sheet pan with a slotted spoon. Leave the cooking liquid in the pot. Shred the meat with two forks. Pull off any large pieces of fat. Those pieces are not weighed, so the raw weight stays in the count. Heat the broiler. Broil the shredded pork until the edges are brown, about 5 to 8 minutes. Watch it so it does not burn.
- Take out the bay leaf if it came out of the pot with the meat. Serve the pork in tacos, in a bowl, or over rice. Lime juice and chopped cilantro go on at the table. The card says both are for serving and does not measure them, so they are not in the count. Tortillas and rice are not a second recipe. Rice on the card is to taste, so it is not in the count. The linked card says 8 servings. Leftovers keep covered in the fridge for a few days. Reheat in a skillet until the pork is hot.
Nutrition
Kitchen estimate only, not lab-verified. Counted as 1 of 8 servings: the pork shoulder, the grapefruit juice, the onion, the garlic, the oregano, the cumin, the chili powder, the cinnamon, the bay leaf, and the kosher salt. Lime juice, cilantro, and cooked rice are to taste, so they are not in the count. The grapefruit zest has no SR Legacy peel row, so it is not in the count. The linked card says 8 servings. The pork is 4 to 5 lb. The midpoint is 4.5. A pound of Boston butt, separable lean and fat, raw, is 453.6 g, so 4.5 lb is 2041.2 g. That weight does not include a bone. Large pieces of fat pulled off after cooking are not weighed, so the raw weight stays. The grapefruit juice is 196 g, the amount one fruit yields. Pink grapefruit juice (fdc 167774) does not publish total sugars. White grapefruit juice, raw (fdc 173039) does, and it has the same fruit yield, so that is the row. The onion is 1/2 with no size on the card. A USDA medium onion is 110 g, so half is 55 g. The garlic is 4 cloves. A clove is 3 g, so 4 are 12 g. The oregano is 1 tsp of dried leaves, 1 g. The ground teaspoon is 1.8 g and is not used. The cumin is 2 tsp. The row's teaspoon is whole seed, 2.1 g, so 2 tsp is 4.2 g. There is no ground-cumin portion. The chili powder is 1 tsp, 2.7 g. The cinnamon is 1/4 tsp, 0.7 g. The bay leaf is 1, counted as 0.6 g of crumbled bay. The kosher salt is 3 tsp. Volume uses Morton kosher salt, 4.8 g per teaspoon, instead of USDA table salt at 6 g per teaspoon. 18 g × 4.8/6 = 14.4 g. Diamond Crystal is about 2.8 g per teaspoon and would be lower in sodium. Added sugars are 0. The card did not list a sweetener. About 3 g of sugars per serving sit in the grapefruit, the onion, and the spices. The kosher salt is the salty part.
