Peas and Asparagus Casserole
SaveCanned peas and cut asparagus folded with cream of mushroom soup and a crispy fried-onion top.

Ingredients
- 15 oz / 425 g Canned peas, drained
- 15 oz / 425 g Canned cut asparagus, drained
- 1 can (10.5 oz / 298 g) Condensed cream of mushroom soup
- 1 cup Crispy fried onions
Method
- Heat the oven to 350°F / 175°C.
- Fold the peas, asparagus, and condensed soup together in a small baking dish. Do not add extra salt yet.
- Scatter the crispy fried onions over the top.
- Bake 20 minutes, until the casserole is hot and the onions are deep golden. Rest 5 minutes.

Low-sodium friendly
Use a reduced-sodium or no-salt-added cream of mushroom soup, and rinse the canned vegetables. Skip extra salt. Use fewer fried onions if you want less salt on top.
Gluten-free style
Use a cream soup labeled gluten-free. Swap the topping for gluten-free crispy fried onions, or for gluten-free breadcrumbs tossed with a little oil.
Dairy-free
Use a dairy-free condensed mushroom soup. The canned vegetables are fine either way.
No mushrooms
Use condensed cream of celery the same way, and read that label too.
