Ingredients

  • 1/2 cup / 109 g Neutral oil, for the sauce
  • 1/2 cup / 118.4 g Water, for the sauce
  • 1 cup / 100 g Green onions
  • 1 cup / 16 g Cilantro leaves
  • 4 / 12 g Garlic cloves, for the sauce
  • 1 tsp / 6 g Salt
  • juice of 4 limes / 176 g Lime juice
  • 1 cup / 230 g Sour cream
  • 6-9 cups / 525 g Shredded cabbage, for the slaw
  • 3 lb / 1360.8 g Shrimp
  • 2 Tbsp / 16 g Chili powder, for the shrimp
  • 2 Tbsp / 12 g Ground cumin, for the shrimp
  • 1 1/2 tsp / 3.6 g Onion powder, for the shrimp
  • 1 1/2 tsp / 4.65 g Garlic powder, for the shrimp
  • 3/4 tsp / 1.35 g Cayenne pepper
  • 3 tsp / 18 g Coarse sea salt
  • 24 / 576 g Corn tortillas
  • not weighed Oil, for the skillet
  • not weighed Smashed avocado
  • not weighed Cotija cheese
  • not weighed Lime wedges

Method

  1. Make the sauce. Pulse 1/2 cup of oil, 1/2 cup of water, 1 cup of chopped green onions, 1 cup of cilantro leaves, 4 garlic cloves, 1 teaspoon of salt, the juice of 4 limes, and 1 cup of sour cream until the sauce is mostly smooth. The comment says sour cream or full-fat Greek yogurt. This card uses sour cream. The comment says oil and does not name the kind. This card uses a neutral oil. A clove of garlic is 3 g, so 4 are 12 g. One lime yields 44 g of juice, so 4 are 176 g.
  2. Toss some of the sauce, not all of it, with the shredded cabbage. The comment says 6 to 9 cups. The midpoint is 7.5 cups. A shredded cup is 70 g, so 7.5 cups are 525 g. Save the rest of the sauce for the tacos. The whole sauce is eaten, so the full batch stays in the count.
  3. Pat 3 pounds of shrimp dry. The comment says 3 pounds and does not give a count of shrimp. A pound is 453.6 g, so 3 pounds are 1360.8 g. Toss them with 2 tablespoons of chili powder, 2 tablespoons of ground cumin, 1 1/2 teaspoons of onion powder, 1 1/2 teaspoons of garlic powder, 3/4 teaspoon of cayenne, and 3 teaspoons of coarse sea salt. The comment says the cayenne can move to taste and still writes 3/4 teaspoon, so that spoon stays in the count. Heat a drizzle of oil in a large skillet over medium-high heat. The comment does not weigh that drizzle, so it is not in the count. Add the shrimp. Cook 5 to 8 minutes, flipping them, until they are cooked through and no longer translucent. There is no raw shrimp on the plate.
  4. Warm 24 small corn tortillas. The comment says a flour tortilla or a corn tortilla and does not count them. This card uses corn. One USDA corn tortilla is 24 g, so 24 are 576 g. The comment does not give a yield. A comment on the thread links the same plate as a smaller batch: 1 pound of shrimp, 8 small tortillas, and 4 people. This comment writes 3 pounds of shrimp, so this card cuts 12 servings, 2 tacos each.
  5. Build each taco with smashed avocado, the slaw, and the shrimp. Finish with cotija, lime wedges, and the rest of the sauce. The comment does not weigh the avocado, the cotija, or the lime wedges, so those three are not in the count. The elote salad in that same comment is a separate dish and is not on this card. Leftovers keep covered in the fridge for a few days. Reheat the shrimp until they are hot in the center.

Nutrition

Kitchen estimate only, not lab-verified. Counted as 1 of 12 plates, 2 tacos each. The comment does not give a yield. The shrimp is 3 pounds. A linked smaller batch of the same plate is 1 pound of shrimp for 4 people, so this card cuts 12. The oil, the water, the green onions, the cilantro, the garlic, the sauce salt, the lime juice, the sour cream, the cabbage, the shrimp, the chili powder, the cumin, the onion powder, the garlic powder, the cayenne, the coarse sea salt, and the tortillas are in the count. The skillet oil, the avocado, the cotija, and the lime wedges are not weighed, so they are not in the count. The oil is 1/2 cup, 109 g. The water is 1/2 cup, 118.4 g. The green onions are 1 cup, 100 g. The cilantro is 1 cup, 16 g. The garlic is 4 cloves, 12 g. The sauce salt is 1 teaspoon of table salt, 6 g. The lime juice is 4 limes at 44 g each, 176 g. The sour cream is 1 cup, 230 g. The cabbage is the midpoint of 6 to 9 cups, 7.5 shredded cups, 525 g. The shrimp is 3 lb, 1360.8 g, raw. That row may contain additives to retain moisture, and that sodium stays. The chili powder is 2 tablespoons, 16 g. The cumin is 2 tablespoons, 12 g, weighed with the whole-seed spoon. The onion powder is 1 1/2 teaspoons, 3.6 g. The garlic powder is 1 1/2 teaspoons, 4.65 g. The cayenne is 3/4 teaspoon, 1.35 g. The coarse sea salt is 3 teaspoons counted at the table-salt spoon, 6 g each, 18 g, because the salt row has no coarse spoon. Coarse salt would be less sodium. The tortillas are 24 corn tortillas at 24 g, 576 g. Added sugars are 0. The card did not list a sweetener. About 3 g of sugars per plate sit in the cabbage, the lime, the tortillas, the sour cream, and the sauce vegetables. The sea salt, the sauce salt, and the shrimp are the salty parts. One plate is 1495 mg sodium.

Guest diet / allergy swaps

Short kitchen notes for guests. A fuller gluten-free or dairy-free ingredient list, when we have one, is in the panels below.

  • Dairy-free

The dairy in the count is the 1 cup of sour cream. Use a sour cream whose package does not list milk, or leave it out. The comment's other option is full-fat Greek yogurt, which is still dairy. Cotija is not weighed. Leave the cotija off for this plate. The shrimp, the cabbage, and the tortillas stay. This is a kitchen note, not a dairy-free certification.

    • United States: Sour cream whose package does not list milk, or no sour cream. Leave the cotija off. The shrimp stays.
    • United Kingdom: Soured cream with no milk, or leave it out. Leave the cotija off.
  • Gluten-free style

This card uses 24 corn tortillas. Use tortillas whose package does not list wheat. Wheat, when it shows up, is in the chili powder. Use a chili powder whose package does not list wheat. The sour cream stays, so this plate is not dairy-free. This is a kitchen note, not a gluten-free certification.
