Ingredients

  • 1 lb / 450 g Ground beef, about 85% lean
  • 1 small (about 100 g) Yellow onion, finely diced
  • 2 Garlic cloves, minced
  • 1 Tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • ¾ tsp Kosher salt
  • ¼ cup / 60 ml Water, or low-sodium beef broth
  • 8 Small flour tortillas, about 6-inch / 28 g each. Flour tortillas contain wheat; that is the gluten in this plate. Corn tortillas labeled gluten-free are the swap below.
  • To taste Shredded lettuce, diced tomato, shredded cheese, salsa, and lime wedges, for serving (optional). The cheese is the dairy. Skip the cheese for a dairy-free plate.

Method

  1. Set a wide skillet over medium-high heat. Add the ground beef and the onion. Cook, breaking the meat into small crumbles, until the beef is browned and the onion is soft, about 8 minutes. Pour off the extra fat. Leave a thin coat in the pan so the meat does not dry out.
  2. Stir in the garlic, chili powder, cumin, paprika, and salt. Cook 1 minute, until the spices smell warm. Use a mild chili powder, not cayenne. If the blend tastes hot, use less next time so the plate stays mild.
  3. Pour in the water, or the same amount of low-sodium beef broth. Simmer 2–3 minutes, stirring, until the beef looks moist and saucy, not soupy and not dry. Take the pan off the heat. Taste, and add a pinch more salt only if it tastes flat.
  4. Warm the tortillas in a dry skillet over medium heat, about 20–30 seconds per side. Or wrap the stack in a clean damp towel and warm it in a 300°F / 150°C oven for about 8 minutes. The flour tortillas are the gluten. If the plate should skip wheat, use the corn-tortilla swap instead of these flour tortillas.
  5. Spoon the beef into the warm tortillas. Add lettuce, tomato, cheese, salsa, and lime only if you want them. Cheese is optional, and it is the dairy on this plate. Leave it off and the skillet itself has none. The beef keeps covered in the fridge for a few days. Warm it with a splash of water so it stays soft.

  • Turkey or leaner beef

    Use 1 lb ground turkey in place of the beef, and add 1 tsp oil to the cold skillet so the turkey does not stick. Cook it to 165°F / 74°C. The plate is no longer beef. Or stay with beef and buy 90% or 93% lean. You will pour off less fat, and the skillet will be a little drier, so keep the splash of water.

  • Dairy-free

    Skip the cheese. The skillet is beef, onion, garlic, spices, salt, and water or beef broth, with no milk or butter. Read the tortilla bag and the salsa jar. Some of those add milk. Leaving the cheese off is the dairy-free plate. This is a kitchen note, not a dairy-free certification.

  • Gluten-free style

    Skip the flour tortillas. Warm 8 corn tortillas whose bag says gluten-free, and serve the same beef in those. Read the chili powder jar. A few blends add wheat flour. Use one that does not list wheat. This is a kitchen note, not a gluten-free certification.

  • Lower sodium

    Use ¼ tsp salt and 2 tsp chili powder instead of ¾ tsp salt and 1 Tbsp chili powder. Finish with water, not broth. Tortillas and salsa still carry salt, so read those packages and use less salsa at the table. This is a kitchen note, not a low-sodium diet.
